The best Lemon Loaf to bake as a family – In less than 10 steps!

This zesty lemon loaf is sweet and perfect for the end of fall! Baking is an excellent way to spend time with your child, and with this English recipe, you can practice English with your child at home! 

If you are looking for something to do with your child at home and a delicious dessert to share, this lemon loaf is perfect for you! So, let’s get started. 

Ingredients:

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 2 Tbsp lemon zest
  • ½ tsp salt
  • ½ cup butter melted (can substitute with vegetable or canola oil)
  • 1 cup of white sugar
  • 3 large eggs
  • 1 cup plain Greek yogurt
  • 2 Tbsp lemon juice (half a lemon)
  • 1 tsp vanilla extract

Lemon glaze (To pour onto your lemon loaf)

  • 1 cup powdered sugar
  • 1 ½ Tbsp lemon juice
  • 1 Tbsp milk

Instructions: Before cooking have a look at the image above and discover what items you need to cook your lemon loaf!

  1. Preheat oven to 350° F. Grease a loaf pan (9×5-inch) or line it with parchment paper.

  2. Whisk  together flour, baking powder, lemon zest, and salt in a medium bowl until combined. Set aside.

  3. Cream together butter (or oil), sugar, and eggs in a medium bowl with an electric mixer on medium speed. Mix until fully combined and fluffy (about five minutes).

  4. Add Greek yogurt, lemon juice, and vanilla extract. Beat with an electric mixer on medium speed until combined (1-2 minutes).

  5. Add ⅓ of the dry ingredients and mix with an eclectic mixer on low speed. Once combined, add another ⅓ of the dry ingredients and mix until combined. Finally, add the last of the dry ingredients and mix until combined. There may be some lumps, but that is normal.

  6. Pour batter into loaf pan, using a spatula to scrape the edges of the bowl and to smoothen the top of the batter once poured.

  7. Bake for 45-55 minutes or until the top of the loaf is golden brown and a toothpick can enter and come out mostly clean.

  8. While baking, start making the lemon glaze. Add powdered sugar, lemon juice, and milk to a medium bowl. Whisk until combined. Taste and adjust lemon flavour as desired. The icing should be thick and not runny. Add powdered sugar as necessary if it is too runny.

  9. When the lemon loaf is fully cooked, take it out of the oven and allow it to cool for 15 minutes. Once cooled, drizzle icing on top. Allow icing to cool on top, cut, serve, and enjoy!
